RISOTTO DE SETAS Y FOIE


Ya ha llegado la primavera... seguimos esperando el buen tiempo.














INGREDIENTES

  • 100 G de foie
  • 200g de setas
  • 1cebolla mediana
  • 2 dientes de ajo
  • 1 vaso de vino blanco
  • 50gramos de mantequilla
  • queso parmesano rallado

1- Picar muy fina la cebolla, el ajo y las setas, sofreírlas en mantequilla a fuego fuerte hasta que estén dorados. Añadir el foie.
2- Saltear durante un par de minutos el arroz antes de empezar a añadir, poco a poco, el caldo hirviendo, remover ligeramente el arroz hasta que quede suelo. Sazonar y continuar el proceso, no dejando que el arroz quede seco en ningún momento.
3- Pasados 10 minutos, se añade el resto de la mantequilla y el queso, se remieve y se mantine la cocción a fuego lento, incorporanto el caldo que vaya necesitando el arroz.
4- A falta de un par de minutos, aderezar con el azafrán, previamente diluido en un poco de caldo hirviendo, y ajustar el punto de sal.

GREECE IN WINTER

PASTELA




INGREDIENTES
  • 1 kg de pechugas de pollo                          
  • 4 cebollas
  • 8 huevos
  • 1 yema de huevo
  • Pasta filo
  • 200 gramos de azúcar
  • 300 gramos de almendras tostadas y picadas
  • 1 manojo de cilantro  picado
  • 1 manojo de perejil picado
  • 1 cucharada y media de canela
  • 1 cucharada de agua de azahar
  • 1 rama de canela
  • Aceite de oliva
  • Azafrán
  • Pimienta
  • sal

1- Cortar las pechugas de pollo en trozos. Saltear la cebolla y dorarla en una cazuela con aceite. Añadir el pollo y mantener a fuego medio. Condimentar con canela en polvo, una pizca de azafrán, sal y pimienta. Añadir 2 vasos de agua o caldo y cocer a fuego lento durante 45 minutos.
2- Añadir el cilantro, el perejil, la canela, el agua de azahar y 200 gramos de azúcar. Cocer otros 15 minutos. Retirar la carne y cortarla en trozos muy pequeños. Reducir la salsa a un tercio de su volumen y mezclarla con los huevos batidos.
3- Untar con aceite una bandeja de horno. Poner en el centro un molde circular sin forndo y, sobre él, una hoja de pasta filo. Situar otras cuatro hojas ligeramente montadas. Untarlas con aceite antes de extender la carne sobre la base del molde. Cubrir con la salsa y colocar encima las almendras. Espolvorear con azúcar. Cerrar las hojas una a una, sobre el relleno, untarlas con yema de huevo y hornearlas a 180º (el tiempo depende de la profundidad del molde y de la cantidad de líquido). Decorar con azúcar glasé y canela en polvo.


INGREDIENTS
  • 1 k of chicken breast
  • 4 onions
  • 8 eggs
  • 1 egg yolk
  • Filo pastry
  • 200 grams of sugar
  • 300 grams of toasted almonds chop
  • Fresh coriander chop
  • Fresh parsley chop
  • One tablespoon and a half of ground cinamon
  • One tablespoon of orange blosson water
  • 1  cinamon steak
  • Olive oil
  • Salt 
  • Pepper
  • Safron  

1- Cut chicken breast into pieces.Sauté onions with olive oil until brown. Add chicken and keep it at medium heat. Season it with cinamon and a pinch of salt, pepper and safrom. Add two glasses of water or chicken stok and let it cook for about 45 minutes.
2- Add coriander, parsley, cinamon steak, orange blosson water and 200 grams of sugar. Cook for another 15 minutes. Remove chicken and cut it into very small pieces.Reduce sauce into one third of its volumen and mix it up with the beaten eggs.
3- Spread olive oil into a oven tray.Put in the middle a circular mould without botton. Place on it filo pastry sheets and inside the meat with the sauce and grounded almonds on top. Close the filo pastry sheets and place in the oven at 180ª C until ready ( be carefull with the mould and the amount of liquid you have, eggs have to be cook inside). For decoration use caster sugar and ground cinamon.

GRILLED TUNA, NOODLE WITH MUSHROOMS AND CHINATOWN IN SAN FRANCISCO





                           A WALK THROUGH CHINATOWN IN SAN FRANCISCO ...                                                            It makes me have a craving for Asian Food, but here at home it is imposible to find even a   cheap chinese restaurant so I have to create something that feels like this.





GRILLED TUNA RECIPE


First you have to marinate the tuna fillets into a mixture of soy sauce and balsamic vinegar, I used for this ocassion a vinegar made of Pedro Ximenez which, by the way, I bought in Sanlúcar. After that put the tuna into a pan with a bit of olive oil and let the tuna browned on the outside a leave it a bit  raw on the inside.
The result is the following. The taste is a bit like asian food.

Primero hay que marinar el atún con una mezcla de salsa de soja y vinagre balsámico. Luego se pone a la plancha para que se dore por fuera y se quede crudo por dentro. Este es el resultado

NOODLES RECIPE
And a very easy noodles' recipe I made the other day, just need some mushrooms, garlic, white wine and soy sauce. In a wok put chopped garlic and mushrooms to cook with olive oil, when they start to brown pour white wine and when wine had disolved add soy sauce and water and cook the noodles for five minutes.
This is the result, as you can see it is a very easy to cook dish and very fast to prepare.

Una sencilla receta de noodles que hice el otro día, lo único que se necesita son setas, ajo vino blanco y salsa de soja. Pones en el wok ajo picado, setas y aceite de oliva, cuando empiecen a dorarse se añade vino blanco y cuando este se haya disuelto se añade salsa de soja y agua y se cocinal los noodles durante cinco minutos. Este es el resultado como ves fácil y rápido.
