QUICHE DE VERDURAS Y BRIE

   
I like this kind of recipes because besides being very simple, it is the kind of dish you can take away if you, for example, have to eat at work. You can prepare it the day before and it is a good alternative to sandwiches. It can be made with almost anything you have in you kitchen and  replacing the cream with yogurt  you will get a lighter quiche. If you have leftover you can freeze it and eat it other day, just defrost it with the oven and it will be crisp again.
INGREDIENTS
*1 carrot, grated
*1 zucchini, grated
* 1 bunch of spinach
* 4 cloves garlic
* Fresh asparagus
* 1 tomato
* 150 ml cream
* 3 eggs
* Brie
* Salt and pepper
* Olive oil
* Fresh basil
1- Put chop garlic in a sauce pan with olive oil and once it starts to brown add the grated carrot and zucchini.
2- Let cook for 5 minutes over medium heat and add spinach and asparagus finely chopped.
3-  Allow to simmer for 10 minutes and add the chopped tomato, salt, pepper and herbs you like.
4-  Once ready let it cool a bit and add cream and beaten eggs.
5- Preheat the oven 180º
6- In a baking dish place the puff pastry, add the filling and place over it slices of brie cheese and fresh basil leaves
7- Put in the oven for 20 minutes or until filling gets ready.


Me gusta este tipo de recetas, porque además de ser sencillas, es el tipo de plato que puedes llevarte para comer fuera, lo dejas preparado el día anterior y puedes comer algo distinto a los bocadillos que ahora mismo me cuestan tanto comer. Puedes hacerlos con casi cualquier cosa y puedes sustituir la nata por yogur si quieres que sea más light. Cuando sobra lo congelo y lo tengo para otro día, luego lo descongelo en el horno para que vuelva a estar crujiente.
INGREDIENTES
* 1 zanahoria rallada
* 1 calabacín rallado
*1 manojo de espinacas
* 4 dientes de ajo
* Espárragos frescos
* 1 tomate
*150ml de nata
* 3 huevos
* queso brie
* sal y pimienta
* aceite de oliva
* Albahaca fresca
1- Poner a rehogar el ajo y una vez que empiece a dorarse añadirle el calabacín y la zanahoria rallada.
2- Dejar cocinar por 5 minutos a fuego medio y añadirle las espinacas y los espárragos bien picados.
3- Dejar a fuego lento durante 10 minutos y añadirle el tomate picado, sal, pimienta y la especie que nos guste, yo al mío le he añadido hierbas provenzales.
4- Una vez listo dejar enfriar un poco y añadirle la nata y los huevos batidos
5- Precalentar el horno a 180º
6- En una fuente colocar el hojaldre, añadirle el relleno y encima del relleno colocar queso brie y albahaca fresca. 
7- Meter en el horno por 20 minutos aproximadamente o hasta que el relleno quede hecho

TEMPURA DE VERDURAS-VEGETABLE TEMPURA


For this recipe you can use any kind of vegetable, I specially like broccoli and cauliflower because tempura enhances their flavour. In the mass of tempura I usually add a mix of spices (chilli, coriander and mustard seeds, pepper, ground ginger and turmeric) the result is very interesting.
Serve at the centre of the table with a bit of wassabi (when I don't have wassabi I use Dijon mustard, it's not the same but wassabi breaks down very quickly and it's not something you use every day) and soy sauce.
For the mass of tempura I usually buy prepared one because it takes more time and effort to make it yourself but in case you are interested, this is the recipe.

TEMPURA MASS
*2 cups flour
*2/4 cup corn or potato starch
*1/2 teaspoon baking powder
*1 egg
*2 and half cups cold water
1- Mix in a bowl the flour, cornstarch and baking powder.
2- Fill 1/3 1/3 of a  large bowl with ice and water and place in other bowl with the cool water and add the egg and beat it lightly with the water-
3- Add to the small bowl the flour, starch and yeas andsmoothly beat smoothly
4- Very important not beat too much the mixture and keep it cool.
FRYING
1- Cut the eggplant into slices and the broccoli into small pieces, peppers, zucchinis and carrots in julienne.
2- Pass the ingredients into the tempura mass with the spices and fry in a wok in very hot oil.




Para esta receta se puede utilizar cualquier tipo de verduras, a mi particularmente me gusta el brócoli y la colifror ya que la tempura realza su sabor. En la masa de la tempura yo suelo añadir una mezcla de especies (chile, semillas de cilantro y mostaza, pimienta, gengibre molido y cúrcuma) el resultado final es muy interesante. 
Servir al centro de la mesa con un poco de wassabi ( cuando no tengo yo suelo usar mostaza de de Dijon, no es lo mismo, pero es wasabi se estropea bastante rápido y no es algo que se utilice todos los días) y salsa de soja para que cada uno se sirva.
Para la masa de la tempura, yo no la suelo hacer porque requiere mucho más tiempo, normalmente yo la compro ya preparada pero si la quieres hacer esta es la receta:
MASA DE TEMPURA
* 2 vasos harina floja
*2/4 vaso de fécula de maiz o patata
*1/2 cucharadita de levadura
*1 huevo
*3 vasos de agua fría
1- Mezclar en un bol la harina, la fécula y la levadura.
2-Llenar 1/3 de un bol grande con agua y hielo y colocar sobre él otro bol con agua fría. Añadir el huevo y batirlo ligeramente con el agua.
3- Incorporar al bol superior la mezcla de harina, fécula y levadura. Ligar suavemente.
4- Importante no ligar demasiado la masa y mantenerlamanteneral fría hasta el momento de usarla.
FRITURA
1- Cortar la berenjena en rodaja, el brócoli en pequeños trozos, el calabacín, el pimiento y la zanahoria en juliana fina.
2- Calentar abundante aceite en el wok, pasar los ingredientes por la masa ( a la que previamente habremos añadido las especias) y freírlos de inmediato.

MAGDALENAS





Mi primer intento de hacer magdalenas, se quedaron un poco secas, creo que debí haber batido más los huevos con el azúcar. La próxima vez será. De todos modos estaban buenas de sabor y a mis sobrinos les gustó mucho.

 INGREDIENTES
*5 huevos
* la piel de medio limòn
* la piel de media naranja
*200 g de harina
* 200 g de mantequilla
* 10 g de levadura química
* 200 g de azúcar
* Sal
* Harina para espolvorear
*1 cucharada sopera de mantequilla para engrasar
* Chocolate

1- Batir los huevos, una pizca de sal y el azúcar en un cuenco al baño María, hasta blanquear la mezcla y conseguir que al menos duplique su volumen inicial. Añadir las pieles de limón y naranja ralladas
2-  Dejar caer la harina previamente mezclada con levadura, poco a poco y en forma de lluvia sobre los huevos batidos sin dejar de trabajar la mezcla suavemente con la espátula.
3 Incorporar la mantequilla a punto de pomada, que puede ser sustituida por aceite de oliva,  y el chocolate y mezclar con suavidad. Cubrir con un paño y dejar reposar 15 minutos en un lugar seco
4- Engrasar unos moldes de magdalena con un pincel mojado en mantequilla fundida y espolvorearlos con harina. Llenar las tres cuartas partes de cada molde con la masa y meter en el horno precalentado a 200º durante 10 o 12 minutos.








My first attempt at this magdalenas, I think I should beat more the eggs  and sugar,  next time will be. Anyway they were good flavour and my nephews loved then.

 
INGREDIENTS
* 5 eggs* Half lemon zest* Half orange zest* 200 g flour* 200 g butter* 10 g baking powder* 200 g sugar* Salt* Flour for sprinkle* 1 tablespoon butter for greasing* Chocolate1 - Beat the eggs, a pinch of salt and sugar in a bowl in a water bath until the mixture whitening and get at least double its initial volume. Add the lemon and orange zest  grated.2 - Drop the flour previously mixed with baking powder, little by little and in the form of rain over the beaten eggs while continuing to work the mixture gently.3 Add the butter cream point, which can be substituted for olive oil, and chocolate and mix gently. Cover with a cloth and let stand 15 minutes in a dry place4 - Grease muffin molds with a brush dipped in melted butter and sprinkle with flour. Fill each mold with the dough and place in preheated oven at 200 º for 10 to 12 minutes.

CROQUETAS DE SETAS Y GAMBAS

INGREDIENTS
*Flour
*milk
*fish stock
*250g prawns
*250 g mushrooms
*salt, pepper and nutmeg
*2 onions
*basil
*bread crumbs and eggs

1-  Chop the onions very finely, put then into a pan with olive oil for five minutes.
2- Add the mushrooms to the onions and let them cook until they get brown
2- Pour flour, depending on the amount of croquettes you want to make you will use more or less flour. Also depending of how you like them, if you want the croquettes to be thicker you will use more flour than if you want then to be lighter. I like them very ligth but they are more dificult to make.
3- Ad a glass of stock and keep stirring
4- pour the milk slowly and keep stirring all the time ( don't put all the milk at the same time, you need to check if more milk is needed while you are stirring the mixture)
5- Once you get the consistency you want, let the mixture cool for an hour.
6- Make the croquettes and coat them in eggs and bread crumbs
7-Fry the croquettes in very hot oil.

INGREDIENTES
*Harina
*leche
* 250g gambas
*250 grs de setas
* 1 puñado de albahaca fresca
*2 cebollas
* 1vaso de caldo de pescado
* sal, pimienta y nuez moscada
* Pan rallado y huevo


1- Poner en una sartén la cebolla picada con aceite de oliva rehogar durante cinco minutos y añadir las setas. Mantenerlos en la sartén hasta que empiecen a dorarse
2- Añadir las gambas y mantenerlo a fuego medio hasta que se hagan
3- Añadir la harina para que se dore un poco, dependiendo de la consistencia que se quiera conseguir se usará más o menos harina. Yo las suelo hacer con poca harina para que se queden muy suaves, pero luego a la hora de darles forma es más complicado.
4- Añadir el vaso de caldo de pescado, sal, pimienta,nuez moscada y la albahaca picada y remover sin parar, cuando espese ir añadiendo la leche poco a poco hasta conseguir la consistencia deseada. Dejar enfriar
5- Formar las croquetas y pasarlas por huevo y pan rallado
6- Freirlas en abundante aceite muy caliente

CREAM CHEESE AND MANGO CREAM CARAMEL - FLAN DE QUESO Y MANGO


This recipe is very useful when you have very ripe fruit, instead of throwing then to the rubbish you can make this dessert. You can use any fruit you like I use mango because is one of my favourites

INGREDIENTS

250 g of cream cheese.
1 yogurt
2 ripe mangoes
3 eggs
100 g of sugar (you can use more or less sugar depending what you like)
caramel

1-Mix the cream cheese with the yogurt, mangoes eggs and sugar
2-Put the mixture into small moulds with caramel at the bottom
3- Put in the oven and double boil  to 180º for 20 minutes or until done.


Esta receta es muy útil cuando tienes fruta muy madura que no está buena para comer, para no tirarla puedes hacer estos flanes.

INGREDIENTES
1 tarrina de queso filadelfia
1 yogurt natural
2 mangos maduros
3 huevos
100g de azúcar
caramelo líquido

1- Mezcla el queso de untar con el yogur, los huevos los mangos y el azúcar con la batidora
2- Pon la mezcla en moldes de flan con caramelo
3- Poner en el horno al baño maría a 180º durante 20 minutos

TEGLIA DI PATATE E FUNGHI




I found this recipe in one of the books in my kitchen, and I have to say that as simple as it seems, just potatos and mushrooms, the result is really amazing. You can eat it as a main course or you can use as a side dish with some meat. If you use this as a side dish I recomend you to cut it with a round molde the result will be visually great.

INGREDIENTES (for six people)
1k of potatoes
250g of  mushrooms
2 onions
100g of parmesano cheese
200ml of cream
olive oil
salt and pepper

1 - Sauté the mushrooms for 5 minutes over low heat
2 - Add the onions cut into thin strips and keep over low heat, stirring occasionally, until dark without  burning. Add salt and pepper
3 - Cut the potatoes into thin slices.
4 - Preheat oven to 180 º
5 - Spread oil in the baking tray, arranging in it alternate layers of potatoes and mushrooms and onions, sprinkling each layer with a little Parmesan cheese, salt and pepper
6 - Cover with cream and bake one hour.



Encontré esta receta en un libro de cocina italiana que tengo en la cocina, a pesar de lo simple que 
parece, sólo patatas y setas, el resultado es increíble. Se puede comer como un solo plato o como acompañamiento de carnes, si lo haces como acompañamiento te recomiendo que utilices un molde redondo o cuadrado para cortarlo, el resultado será muy llamativo.

INGREDIENTES ( para 6 personas)
* 1 kg de patatas
*250 grs de setas
*2 cebollas 
*100grs de queso parmesano
* 200 ml de nata
*Aceite de oliva
*sal y pimienta

1- Rehogar las setas durante 5 minutos a fuego lento
2- Añadir las cebollas cortadas a tiras finas y mantener a fuego lento removiendo de vez en cuando, hasta que estén de color oscuro sin que lleguen a quemarse. Añadir sal y pimienta
3- Cortar las patatas en rodajas muy finas y untar con aceite una cazuela ( si lo usas como acompañamiento la bandeja del horno para que no quede alto el pastel y luego se pueda cortar mejor)
4- Precalienta el horno a 180º 
5- Untar con aceie una cazuela de barro, disponiendo en ella capas alternas de patata y setas con cebolla, espolvoreando cada capa con un poco de queso parmesano, pimienta y sal
6- Cubrir con nata y hornear una hora.
