CHEESE PART ONE: BLUE STILTON - QUESO PRIMERA PARTE: AZUL STILTON

Last friday I was really tired even for going out to have dinner, so we decided  to buy some cheese and a botle of wine and spend the night home.One of the cheeses I bought was blue stilton, for me the best blue cheese you can have. I have left a link for more information about this fabulous cheese. First time I tried blue stilton was when I was living in the UK and since then it has been my favourite.


When the cheese I had left I make on saturday this risotto with spinach and blue stilton that was really delicious.

BLUE STILTON AND SPINACH RISOTTO

Ingredients for two persons
200 g of spinach
blue stilton cheese
rice
white wine
2 onions
vegetable stock
2 tablespoon of butter
olive oil

Poach the onions in the olive oil until brown.
Put the spinach in the pan and let then cook
put the rice into the pan and ad a glass of white wine and stirr
Add the stock, it must be boiling
keep stirring the rice
after 10 minutes put the butter and the cheese and keep stirring
pour more stock if needed


RISOTTO DE ESPINACAS
200 grs de espinacas
2 cebollas
1 vaso de vino blanco
arroz
caldo vegetal
queso azul stilton
2 cucharadas de mantequilla
aceite de oliva

Pon la cebolla a dorar en una sartén 
Añade las espinacas dejarlas cocinar hasta que estén hechas
Añadir el arroz
Añadir el vino blanco
Una vez que se absorba añadir el caldo vegetal que deberá estar hirviendo
Remover el arroz todo el tiempo
Cuando pasen diez minutos de coción añadir la mantequilla y el queso

VEGETARIAN BURGER - HAMBURGUESAS VEGETARIANAS

 
I don't remember where I found this recipe, I think it was an article in a newspaper magazine on cheap recipes. I found the idea very interesting and since then there are always in my fridge a bunch of then. Of course, I didn't copy the recipe so I make then in the same way I do meat balls but with curry.
The main ingredient is a bag of frozen mix vegetables.

INGREDIENTS
- 1 bag of frozen vegatables
- 2 eggs
- curry
- crumble bread
- flour
- white wine
- 1 onion
- salt

- Defrost the vegetables ( you can use the microwave)
- Put then in a bowl with the eggs, wine, crumble bread, curry and the onion
- Use a food processor to combine all the ingredients
- with the mixture make the burgers and coat then in flour
- Put then in a pan with a bit of oil.



Creo que cogí la idea para esta receta del suplemento dominical de algún diario, me pareció muy interesante y desde entonces siempre tengo en mi congelador unas cuantas, son muy útiles cuando no tienes ganas de cocinar. No copié la receta así que más o menos uso la misma mezcla que para las albóndigas pero le añado curry.
El ingrediente principal es una bolsa de menestra congelada.


INGREDIENTES
- 1 bolsa de menestra congelada
- 2 huevos
- 1 cebolla
- 1 vaso de vino blanco
- curry
- Harina
- Pan rallado
-sal


- Dejar descongelar la menestra ( se puede usar el microondas)
- Poner la menestra en un bowl y añadirle los huevos, la cebolla, el vino, el curry, la sal y el pan rallado
- Pasar por la batidora
- Hacer las hamburguesas y pasarlas por harina
- Poner en una sartén un poco de aceite

COCONUT CREME CARAMEL - FLAN DE COCO






I found this recipe in a Thai cook book at the library, I have a notebook with lots of recipes I like but when I want to cook something I've never got inspired by it because I need pictures, so that is the reason I am doing this blog

INGREDIENTS
- 3 eggs
- 2 egg yolks
- 2 glasses of coconut milk
- 100 grs of sugar
- 1 tablespoon of vanilla flavoured sugar

- Whisk the eggs and the egg yolks, along with the coconut milk, vanilla flavoured sugar and sugar until mix properly
- put the mixture into a baking pan with caramel ( I used sweet wine with sugar) and put in the oven and bake in a bain-marie until ready


Esta receta es de un libro de cocina Tailandesa que encontré en la biblioteca, la tenía apuntada en una libreta que pretendía ser mi libro de recetas pero sin fotos no me inspiraba nada.


INGREDIENTES
- 3 huevos
- 2 yemas
- 2 vasos de leche de coco
-100 g de azúcar
- 1 cucharada de azúcar aromatizado con vainilla
- caramelo, yo utilicé vino dulce  con azúcar


-Batimos los huevos y las yemas de huevo, la leche de coco, el azúcar aromatizado con vainilla y el azúcar hasa que este último se haya deshecho totalmente.
- Ponemos la mezcla en cuencos pequeños a los que previamente le hemos añadido caramelo
- Cocer al baño maría al horno
